It can depend on the vegetable, and also where you are... if you're unsure, the best way to check is to steam the vege, and then test it with iodine.
Many folk around here find that they do better when they eliminate dairy as well. But, you need to keep in mind that this is no one size fits all diet. Best thing to do is to keep a food/symptom diary to track progress, and this may help you pin point any triggers for your hubby.
Elena's Pantry has some great ideas for treats, and there are also lots for you to try in the recipe thread. Almond and coconut flours can help fill you up and keep weight stable. Also great for feeling not so deprived....
