Welcome to KA. Sorry to hear that you have the double whammy of AS *&* RA.

WRT the coconut and apple dilemma, I will let John (Dragonslayer), Chelsea (Kiwi) or some of the other 'long timers' answer that.
Personally, I can "do" coconut and some apples. There is the odd variety of red apple that tests starchy with iodine, so I just know to avoid them now.
I use almond flour in my baking - I buy it from the local supermarket where it is sold (I'm in OZ...)as "ground almond meal" rather than labelled as a type of flour. It is with the other packaged nuts and dried fruits etc...
