Today is my day off, and after reading some of the posts on this topic, I decided to make myself some hotcakes:

Breakfast: almond/coconut flour hotcakes with butter and home made mixed berry jam (& coffee)

Lunch: NSD-style Pad Thai noodles(thanks for the inspiration, Donette) with shirataki noodles that tested *safe* !!!

Dinner: Vietnamese-style pork mini sausages rolled in lettuce with toasted sesame seeds and nuoc cham sauce (fish sauce, garlic, chilli, lemon juice, palm sugar)

Snack: 1/2 a ripe mango and now I'm about to have a square of dark chocolate.

I had bean-free chilli last night Donette - it was soooooo good! The family had white corn tacos, but I just piled chilli, red capsicum, lettuce, a little grated cheddar, homemade guacomole and a splodge of plain Greek yoghurt in a bowl and chowed down! I can't say that I miss the starch-loaded stuff often when I can have a viable alternative... yes
