Janet, if I may, I'd like to respond to your question...

Gluten can be found in wheat, oats, rye and barley and their products, ie: soy sauce, some additives such as "mono and diglycerides", "Malt" and "malt flavoring" and many other forms of additives. The term "natural flavoring" may very well be a wheat product. Caramel coloring and citric acid may also come from wheat.
Although most strict NSD'ers, I would guess, are most likely gluten free, gluten is definitely a different beast from just "starch".
