My own explanation would be rather more prosaic. AS is an immunological cross reaction between Klebsiella pneumoniae and HLA B27, the klebs fuelled primarily by starch. But if the milk isn't digested, then by lactose as well. And maybe the inflamed small intestine magnifies the effect of any klebs in that region.
And gluten only entered our (the ancient Egypticians) diet with wheat about 6000 years ago. And our digestive systems struggle with it along with the starch.
