Good salad -- really summer-y tasting! And it can be made ahead and transported easily as well.

zuchinni (sliced the long way).
Meanwhile, in a bowl, cut up:
4-5
Roma tomatoes, about 1/2 cp
fresh cilantro, and 2 cloves of
garlic.
Add:
juice of a
lemon, 2-3 T.
olive oil, 1 t.
ground cumin, 1/4 tsp
red pepper flakes (optional),
salt, pepper,
and a can of rinsed and drained
white beans (optional), ONLY IF YOU CAN EAT THE STARCH (it's just as good without).
When the zuchinni is done, cut it into 1" pieces. Add it to the salad, stir gently.
