Good for lunch, or good with grilled chicken (or whatever) at supper:

Olive, Tomato, and Kalamata Salad

Put all ingredients into a bowl and toss lightly until mixed well.

2 cups cherry tomatoes
1 chopped bell pepper (use any color -- I like yellow)
1/2 cup pitted black olives (I like kalamata, but canned will do fine)
1/4 cup olive oil
2 cloves garlic, minced
2 Tbsp minced onion (whatever kind you prefer)1/4 tsp. crushed red pepper
2 tsp. grated lemon zest (that's just the yellow part)
juice of a lemon
