Does anyone have a great blueberry muffin recipe made with coconut flour? I tried to find it on the posts in this forum, but was unsuccessful.

Hey Laurie,
I found a good one at glutenfreebay.blogspot.com, i think i googled coconut flour recipes , it's very moist and good (if you like coconut).
1/4 c. plus 2 Tablespoons coconut flour
3 eggs
1/4 teaspoon vanilla
2 TBs canola oil
2 TBS unsweetened coconut milk
3 TBs honey (i used agave nectar)
1/4 tsp. salt
1/4 tsp. baking powder (I've read on here baking powder can cause problems and better to use baking soda and add a splash of vinegar or lemon juice?)
1/2 C. frozen blueberries
whisk eggs, oil, coconut milk, honey, salt and vanilla til thoroughly blended. Sift coconut flour and baking powder into batter and stir until there are no lumps. Fold in blueberries, stir gently. Pour batter in greases muffin tins and bake 400F for 15-18 minutes. Makes 6 muffins.

There are also coconut flour recipes on tropicaltraditions.com, I sub coconut milk or almond milk for dairy milk. Good luck, Mary Cay

BLUEBERRY MUFFINS

6 eggs
4 tablespoons butter, melted
4 tablespoons coconut milk or whole milk
6 tablespoons honey or sugar
1/2 teaspoon salt
1/2 teaspoon vanilla
1/2 cup sifted coconut flour
1/2 teaspoon baking powder
1 cup of fresh blueberries (dry with paper towel to remove excess moisture)
1/4 teaspoon almond extract


Blend together eggs, butter, coconut milk, honey, salt,
vanilla and almond extract. Combine coconut flour with baking
powder and thoroughly mix into batter until there are
no lumps. Mix in blueberries. Pour batter into muffin cups. Bake at 400
degrees F (205 C) for 20-30 minutes. Makes 12 muffins.

When it comes to baking powder, most commercial stuff has starch added so I make my own using cream of tartar and baking soda.

I don't like the smell of coconut milk/coconut cream so I don't use it in the recipe but just use water instead.

Hey Kiwi, what measurements do you use for cream of tartar and baking soda, I've been trying to sub b.s. for b.powder without much luck - bad taste - I think i'm using too much.

2 to 1 ratio.

2 parts cream of tartar to 1 part baking soda

I forgot to mention that when I make muffins I usually add dessicated coconut to the recipe also. If the follow the recipe and only put in coconut flour then I find the muffins are really tiny! I prefer to add a bit of bulk and texture with the dessicated/shredded coconut.

Another thought. I've been using Stevia as a sweetener in place of the honey. To replace the bulk provided by the honey plus some, I add an equivalent amount of plain, whole milk yogurt.
