Hello Big Crunch,
I find it very interesting that you posted this. I have myself just started reading up on the benefits and necessity of animal fat, and that should constitute a large share of our enery intake. I am slowly transitioning, eating less protein and raw greens and more fat (already no starch or sugars). It is great to hear that the diet has helped you so much, congratulations!
But it is interesting that this does not arouse more of a debate. Because this is exactly the opposite of most of what you read about what people with joint issues should eat. Ususally, it is all about avoiding too much fat - whether the advice is from an old fashioned carbo hugger, a non-starch advisor or even a lot of paleo people.
I would love to learn more about your experiences and results.
Regards,
Loha
