A couple of favorites:

Chocolate milkshake -- put milk, cocoa powder(unsweetened), honey, a few ice cubes, and maybe a splash of vanilla into the blender for a minute or so -- nice and thick -- excellent! Hit's the spot when I want chocolate.

Fruit "pie" -- in a dry skillet, toast a handful of pine nuts, and toss them over fresh blueberries, sliced fresh strawberries, etc. Add honey if you like, but I think it's good plain. The toasted pine nuts taste exactly like pie crust!!!

Baked Apples

Core the apples, put raisins, nuts, and cinnamon inside, bake til soft, and then I ad a drizzle of pure maple syrup to the inside before serving.

I found this hand-written recipe - sounds like it should taste great! All that honey, but no instructions, so i have not put it in the diet forum.

Any ideas on how to put it all together?
I'd probably start by soaking the apricots in the water.....
No doubt Patty will have ideas when she's back on line.............

APRICOT HEALTH CANDY

6 oz dried apricots
1/3 cup water
chopped almonds
1 t grated lemon rind
1 t lemon juice
1 t orange juice
1/2 cup honey
1 cup skim milk powder
1 T wheatgerm
1/2 cup sultanas
1/2 cup coconut

extra coconut
(perhaps this means to add some more until the correct dryness/moistness)

I am not sure about the water (whether it is added to all the ingredients or whether it is used to soak the dried apricots) but the extra coconut could be used to coat the mixture after it has been rolled into balls. Little apricot candy balls?

Haroseth is my latest favorite (recipe is on recipe forum). I served it to my sisters with whipped cream the other day at my "NSD lunch" and they both really enjoyed it.

I went to a search engine, put in "apricot health candy" (just like that, in quotes), and found the recipe and instructions. A couple of the amounts are very slightly different from yours, but not significantly so.

You will need:
125 g (4 ozs) dried apricots
1/2 cup water
1/3 cup blanched chopped almonds
1 teaspoon grated lemon rind
1 teaspoon lemon juice 1 teaspoon orange juice
1/2 cup honey
1 cup skim milk powder
1 tablespoon wheatgerm
1/2 cup sultanas
1/2 cup coconut
extra coconut

How to make: Chop apricots, combine with water and honey in saucepan, simmer 10 minutes, or until tender. Do not drain. Add remaining ingredients, except extra coconut. Mix well. Divide mixture into three parts, shape each into a roll 6 inch long. Roll in extra coconut. Refrigerate 2 hours before slicing.

Personally, I'd eliminate the wheat germ.
