Well my lunch is either leftovers from the previous night or Starkist Tuna Fish in a bag (albacore variety) and a large salad. Salad varies as to ingredients.... lettuce, bok choy, kale, radishes, green peppers, red cabbage, collard greens, dandalion greens, alfalfa. Always topped with olive oil (or light) or Picanti Salsa.

I like big salads -- what Cheryl calls "kitchen sink" salads: Romaine, cukes, tomatoes, red or green peppers, avocado, chicken chunks, cheese, garbanzo beans (if the beans are okay for you), balsamic vinegar, olive oil.

At work I usually rob the salad bar, there is always tuna salad, fruit salad and other salads. At home I eat the yogurt with honey and pecans or I make some salad from the vegetables that are always present. For example a salad from avocado and a tomatoe with a dressing from olive oil, walnut oil, mustard and balsamico vinegar.

I literally can't stop when I eat these tomatoes!

Stuffed, Baked Tomatoes

Buy 10 Roma tomatoes, split lengthwise, remove seeds, put them on a baking sheet. (Keep the tomato "guts" and use them for something else later -- maybe in some chili?)

In a skillet, saute in olive oil:
1 finely diced zuchinni
1 finely diced summer squash
2 cloves minced garlic
a slice or two of finely chopped prosciutto

When well cooked, stir in one egg (quickly, so it doesn't turn into a fried egg!), a handful of freshly grated parmesan or Romano (don't get the pre-grated -- it has starch to prevent caking), and some chopped black olives.

Fill the tomato halves with this, top with a touch more cheese if you like (I don't), and bake at 350 for about 30 minutes. (You'll learn to adjust proportions depending on size of tomatoes and squashes -- these always vary. No problem though.)

Outstanding, if I do say so myself!! Good for a lunch (trust me, I can polish off a tray of these!), an appetizer before dinner when you have guests, or as a side dish with grilled chicken . . . And if there are leftovers (doubtful), they reheat easily.

Good for lunch, or good with grilled chicken (or whatever) at supper:

Olive, Tomato, and Kalamata Salad

Put all ingredients into a bowl and toss lightly until mixed well.

2 cups cherry tomatoes
1 chopped bell pepper (use any color -- I like yellow)
1/2 cup pitted black olives (I like kalamata, but canned will do fine)
1/4 cup olive oil
2 cloves garlic, minced
2 Tbsp minced onion (whatever kind you prefer)1/4 tsp. crushed red pepper
2 tsp. grated lemon zest (that's just the yellow part)
juice of a lemon

Southwest Turkey Burgers

These are quick and easy to make . . .

Mix a pound of ground turkey with:
1/2 chopped green onions (tops, too)
1/2 cup chopped cilantro
2 tsp. ground cumin

Grill them, or cook them in a skillet. (Mine don't brown in my no-stick skillet, so I add a couple of teaspoons of canola oil near the end to brown them up -- it sort of fries them to a crispy outside texture.)

Good with sliced tomatoes, lettuce, sliced avocado, salsa (and for the dairy-eaters, throw in some cheddar and sour cream??)

P.S. In case anyone doesn't know, Walmart sells the ground turkey in plastic "tubes" (like sausage comes in?) for just 79 cents a pound. Good deal for us NSDers! I use the ground turkey for meatballs, meatloaf, burgers, etc.

Good salad -- really summer-y tasting! And it can be made ahead and transported easily as well.


Grill 2 zuchinni (sliced the long way).

Meanwhile, in a bowl, cut up:
4-5 Roma tomatoes, about 1/2 cp fresh cilantro, and 2 cloves of garlic.

Add:
juice of a lemon, 2-3 T. olive oil, 1 t. ground cumin, 1/4 tsp red pepper flakes (optional), salt, pepper,
and a can of rinsed and drained white beans (optional), ONLY IF YOU CAN EAT THE STARCH (it's just as good without).

When the zuchinni is done, cut it into 1" pieces. Add it to the salad, stir gently.
