Not healthy, but it is a starch broken down into its simple sugars.
Here is a small blurb regarding it...
HFCS is derived from corn starch. Starch itself is a chain of glucose (a simple sugar) molecules joined together.
When corn starch is broken down into individual glucose molecules, the end product is corn syrup, which is essentially 100% glucose.
Under theory of No Starch Diet... starch (complex/carb of many sugars) is not fully digested and some of the sugar reaches intestines that kicks in the problem.
With corn starch, if it is broken down for us, it probably is mostly digested by time as simple sugars are more easily digested.
Someone can correct me if I am wrong... but I think it is safe from starch standpoint.
