so I'm looking into the NSD and I'm confused - I've noticed people advocating things like almonds as snacks and use of almond meal in recipes, yet the list of starch in foods here on this forum shows a start content in almonds of 2.7 (where as most of the other "safe" foods I've heard people talk of seem to be more like 0.3 or less)
So is there a level at which the starch content becomes "safe"??
And what do people eat? I've been gluten free for 3 years and find that hard enough! I am also concerned that the NSD seems like an Atkins style diet (the old version) which my Dad followed for years and now has high cholestrol, high blood pressure and is right back at his old weight...
I'm not against eating healthily, but don't we need SOME carbohydrates to achieve that??
Fruits and veggies and more veggies. Nuts, Olive Oil. Fish.
Meat in moderation. Eggs in moderation. Dairy in moderation.
Though for me, no dairy is more important than anything else. Thankfully there are some good dairy substitutions: Nut milk. coconut milk yogurt.
Lots of water. Green tea, herbal teas, etc.
If you were only eating meat and starch before and eliminate starch, then yes, you will have an unhealthy diet.
But if you eat your veggies and other whole foods and eat everything in balance, you should be fine.
Always a learning curve though.

It's my understanding that it is the skin on almonds that are starchy. So if you use almonds do skinless. I buy blanched slivered almonds and make my own almond flour in a coffee grinder. If you buy almond flour, make sure it's made from skinless almonds. But I would also recommend not going crazy with the nut intake.
A good place to find meal ideas and recipes is searching online for Paleo- paleo is grain, legume, sugar and dairy free with an emphasis on grass fed, pastured meat. I highly recommend the book "Practical Paleo" by Diane Sanfilippo (shes a nutritional consultant) because it has meal plans, recipes and shopping lists. Paleo does allow starchy root vegetables so I just replace those with more veggies. Vegetables and fruit have plenty of carbs. I recently had to go low carb for a trial per doctor orders and it was extremely hard even being grain/starch free. in my opinion the problem with Atkins (old) is that it didn't take into account the quality of the food- Eat all the processed American cheese, conventionally raised high omega 6 beef and whipped cream you want and that's low carb but not healthy. If its too expensive to buy grass fed beef then I recommend keeping your meats on the lean side and supplementing with olive oil, coconut oil and fish.

it's easy to check the starch content of almonts - blanced or not -, at least here in EU. you should have on the pack the total ammount of carbs and below it the total ammount of sugar. carbs-sugars=starch.
you would be surprised - starch is more than 3-5% on all those almonds - and most of them come from US.

Hum, I am quite confused about those almonds then... Carole Sinclair seems to say they are fine without the skin, however I've iodine-tested one with the skin and it didn't turn black. And now you seem to be saying that even without the skin they are starchy !! Confused...
When first embarking on this diet, just do your best to cut out all the really starchy stuff. Cut out ALL grains, rice, beans, potatoes, cashews, bananas, oats.
Add in more fresh veggies, fruits, nuts, seeds, and seafood or grass fed beef.
I eat almonds or almond milk everyday, and I am 99% pain free.
It just takes a while for the bacteria colonies in our bodies to change, die off, thrive, etc, on our new diet. It usually takes about 6 months for good results, and continues to improve from there.
More advice: Don't just focus on what you CAN'T have. It's more important to focus on HEALTHY FOODS with Nutrients you body NEEDS. Nurtrient dense foods include: kale, mushrooms, seaweeds, hemp seeds, fresh fruits & veggies, fresh herbs, lots of fresh basil, cilantro, parsley, chia seeds, homemade almond or other nut milks, raw fermented sauerkraut, fresh greens, etc. Our bodies weren't getting what they needed in proper amounts, and disease set in. It's our job to feed our bodies what they need so they can overcome disaese and thrive.
I'm now a KICK AS (and Kick IBD) success story!! After going low starch Paleo to heal my gut, I can now eat nearly all starches, grains & foods without inflammation, flare-ups, or pain. Thank you for your advice Betty. Concerning almond milk, which brand do you use ? The ones I've looked at all had added "rice syrup" or "maltodextrine"... I know the brands in Europe might not be the same but it might give me an idea of where to look... Although, Carole Sinclair says that some ppl are really sensitive to starch so small quantities can set them off, hence why I'm trying to cut out all starch. Especially, as 2 weeks into the diet I'm getting encouraging results. I don't feel frustrated actually, just trying to "do it right" and it's quite difficult, it's going to be a lot of trial and error i guess.. Thank for all the advice anyway...
I never use prepackaged almond milks. I always make my own.
Recipe: 1 cup raw almonds 4 cups water
Blend on high. Strain through a nylon "nut milk bag" or cotton kitchen cloth. Drink & enjoy! You can also add a little honey or a medjool date, or vanilla bean to sweeten the taste.
