Why Raagi or Nachani?

The botanical name of this wonder grain is ELEUSINE CORACANA. The seeds of this herb are extremely nutritious and health promoting. Ragi is the principal food-grain of the agricultural classes in Mysore, Madras, Kokan and in the hill tracts of northern India, it is usually converted into flour and a variety of preparation like Cakes, Pudding, Porridge, Bhakri, Papad, etc. are made. The grain is also malted and the flour of the malted grain used as a nourishing food for infants and invalids. Raagi is specially recommended as wholesome food for diabetic patients.

Scientific Information

The average protein content of raagi / Finger millet is 9.8% with well balanced essential amino acids composition along with Vitamin A, Vitamin B and phosphorous. The Raagi / Millet grains contain high amount of calcium and iron having no parallel amongst cereals for these minerals. This makes Raagi/Millet based processed food products like malt, biscuits, cakes etc. more suited for the growing children, expectant mothers and aged people who need more calcium and iron in their diet. Raagi/ Millet is also considered an ideal food for diabetics because of slow release of sugars to the body. High fiber content in grain checks constipation, high blood cholesterol formation and intestinal cancer.

Raagi/ Millet has high glycemic index value. It reduced plasma cholesterol, total serum cholesterol and LDL cholesterol by 9% each and triglycerides by 15%and increased HDL cholesterol, thus showing a significant beneficial effect on the plasma profile.

Oh, a challenge for those on NSD: let's see if we can make roti out of almond flour! I love LOVE South Indian food. I love masala dosas! If starch is something that you need to avoid, let's get cooking and see what we can create in the NSD kitchen using almond flour. Are you a strict vegetarian, or can you eat eggs?

I'm thinking of trying to make a coconut or almond flour and egg-based pancake. No gluten means they can't be too big, or they won't hold together.

Maybe we could mix in a little salt, fresh coriander, toasted cumin seeds (I know spices are supposed to be starchy, but maybe we can sneak in a *little*...)chilli, onion, lemon juice, maybe a fresh curry leaf or two, and come up with something like a stuffed paratha...

I'm out of coconut flour ATM, but I will get onto this when my next delivery arrives next week! smile
