HI guys I have read about the coconut flour you all talk about in recipies. Can I find this in a health food or grocery store? I am thinking of making some bake goods as a weekend SUnday project. I can also use the almonds that Carol Sinclair mentions in her book. Do they have to be skinnless? I just need something sweet! I need to print off some recipies around here too. thanks

You can get coconut flour and almond flour in the health food store. I get mine at Whole foods.

We have Bulk Barn in Canada. I would suspect a goo bulk food store would have it.

Bulk Barn? Haven't crossed one on the western couple of provinces. Sounds like we could use a chain like that here. I have a tough time finding coconut flour in larger packages. It's pricey in itty bitty bags at health food stores. Maybe that will be my excuse for another trip across the country one of these days!  Thanks Moosey!

Yep, the skins are starchy. In a pinch, I've eaten almonds with skins without any major effects, but if you really want to try at least the first couple of months on true NSD you may want to hunt down almonds with no skins. I sometimes just buy skinless almonds at the grocery store and grind them up in a coffee grinder if they're going into a recipe that doesn't require a fine type of flour. You MUST try Kiwi's coconut flour brownies posted in the recipe forum. Also try the coconut flour pancakes - I truly believe they are better than regular flour ones, and MUCH more filling. Make a couple extras to eat as snacks with jam or almond butter. I think I posted my chocolate chip recipe there too - no one has ever noticed they're any different than regular flour cookies. No shortage of recipe ideas around here!

I get all my coconut flour and oil online at tropical traditions. It is organic and they have very good customer service. Alecia

Easy peasy to skin almonds. Heat up a small pan of water. Drop almonds in the hot water, let em sit a few mins. Now scoop out and rub off skins. They just rub off between the fingers.
Used to do this with mother for the almond paste at C'mas. Lbs of almonds had to skinned. Got well used to it. This was afore skinned almonds were available, at all - let alone ground almonds!!
