Hi I was just wondering how long it took others to experience symptoms from eating starch? I often get a sore shoulder or neck soon after eating!!

It is pretty much like that with me a bit like an allergic reaction a couple of hours will do it. George

It doesn't take long. But it will depend on the food. High starch foods only take a few hours. I can eat root vegetables for a few days before enough starch builds up, same for citrus, almonds, cocoa, spices.

I am still experimenting, and I'm not sure what are good indicators of pain, but the times I experience pain seem to be off and on kinda random! I Drank last Wednesday at a friend's birthday, Yagermeister and beer, and quite a bit! I woke up feeling fine in the AS department but real hung over. Friday night I had steak salad (with fried red pepper and broccoli) and a bottle of white wine and Saturday morning I woke in that classic pain! Its taken 2 days to shake off. I think sometimes it may take days to feel? Anyone else experience pain like 2 days later? So almonds bother people? What kinds of spices bother you? I tested all the spices, even the orange ones and they revealed no starch...

I second Jeanne's comments.... for very starchy foods I feel it in 2-3 hours, for foods I call "fringe foods" (I can eat at times, but in excess will eventually feel it) it may take a few days.

Could reactions theretically be faster than this, in the hight of my problems I was reacting almost instantly, say within 15 minutes when I ate something such as white bread or cakes made from white flour!

I can start to feel a bit weird within the hour.. muscle, start getting sore, tight and achey. I start to really feel it in roughtly 3 hours I think. Pain usually hits its max after 24 hours.. then 2 to 4 days to get back to normal.

You may as well have the whole range here.
I feel nothing.
If i am eating rice every day and eat wheat flour products, i get a knee swelling once every 14 days and my eyesight loses its edge within 24 hrs. My neck gets stiffer within 24 hrs.
If i am NOT eating rice or regular carbs, but am very strict (meat and veg only) and then eat wheat products - i get almost zero reaction unless i do it every day for over a week.
I seem to have a base-line thing.

I can usually tell by around 18 hours later at the latest. The night after starch, unless I ate the starch very late in the evening, is usually when I start to flare.
