Here is a recipe found in a 'light' cookbook. My modifications are in parentheses. The recipe instructs to put this over grilled flank steak, but says that you could put it over anything (burgers, sandwiches, or as a pizza sauce). I thought it was really good!
3/4 cup fresh cilantro
2 tablespoons slivered almonds, toasted (I did not toast them)
1 tablespoon chopped seeded jalapeno pepper
1/8 teaspoon salt
1/8 teaspoon black pepper (might want to omit or find substitute if ground pepper bothers you?)
1 garlic clove, chopped
3 tablespoons plain yogurt (I substituted olive oil to avoid dairy; I suspect they instruct to use yogurt to keep it 'light'. I don't know how much olive oil I used, but I probably did not use 3 tablespoons; I just poured some into the mixture until it looked like a pesto consistency.)
1.5 teaspoons fresh lime juice
Combine the first 6 ingredients in a blender or food processor. (I used a Cuisinart mini-prep and it worked great.) Process until finely chopped. Add yogurt (or oil) and juice; process until smooth.
I did not process it more after adding the oil and juice. I thought it looked more like pesto when it was finely chopped.
