Resently for fun I have been testing all the fruit and veggies I eat and most the fruits like apples, pears, papaya turn a dark gray/green color but not the really dark color that bread turns. I have found honeydew melons and green grapes that don't change color at all. Do you guys consider the darkish color to be safe?

I'm no expert, but if they are turning dark green or gray, I would think that indicates starch content. Perhaps these fruits were picked too early and put in cold storage. The iodine should stay the same brownish-orange color if no starch is present.

Pears.. As yet I have not noticed any increase in pain from eating unripe pears. My personal observation only (others may differ). Can't remember ever testing an unripe pear with iodine - i should try it.

Last week I tested some 'meat balls' with iodine. No colour reaction at all. So I ate them. Result: big time pain.. after roughly 4 days I am starting to feel better (as I get older it I guess it will take longer for me to recover?).

Conclusion: just because it doesn't change colour with iodine doesn't make it safe (eg: dairy, inulin, FOS, caramel).

Don't get me wrong though, the iodine test is extremely important and catches at least 90% of problem foods.
