Certain forms of FOS in certain foods (like agave) have been reported to feed klebsiella, BUT that doesn't mean all FOS is out (at least not in my opinion) - as FOS is naturally occurring in foods like garlic, onion, asparagus.

Have you ever heard of the SCD or GAPS diet for healing the gut? They have yogurt cultures that are approved for those diets, and that is where I would get mine cultures back when I was experimenting with making the homemade 24 hour yogurts.
