The fatigue was always one of the worst symptoms for me. I would get home at night so drained from work that I could barely get up my porch steps. Cooking, cleaning, didn't have it in me to do anything, but since I lived alone I had no choice. If I didn't do it, no-one would.

Dinner in those days would usually be trail mix and fruit or popcorn. Sad, I know.

Cleaning I tended to save until the weekend and then I would do it in shifts. Work for, say, 15 or 20 minutes, rest for half an hour. It would take all day, but the cleaning would get done and I wouldn't be absolutely knackered (just somewhat).

You sound like you really do want to take care of your horse, so perhaps you could do it like that. Make yourself go out there and curry for 10 mintues. Then rest for a bit and then get back at it for another 10 minutes or so.

Sometimes, especially if you're on your own, you just have to suck it in, tough it out and make yourself start something. When I do that (assuming I'm not being idiotic about it) I generally find that the fatigue lifts enough to let me do what I need to do. Especially if I alternate rest periods with the work.
