Reading paleo blogs it almost sounds as if there's no limit to the amount of fat and animal product a person can eat as long as you don't ingest any starch. But surely there's a limit? Yesterday I ate the following, today I am up 1 belt size and belly is distended, sticking way out like I'm pregnant. Surely I ate too much? Or was it simply the wrong types of food? I am in an active AS and UC flare at the moment so it's hard to know what to eat that won't affect one condition or the other...

Breakfast
- 3 eggs and 2 slices of bacon, with maple syrup on top (Carol Sinclair's daily breakfast)

Snack
- Larabar (organic date-and-almond bar)
- 1/4 cup organic coconut milk

Lunch
- 2 cups of chicken salad with lots of Hellman's real mayo
- small salad
- 2 pieces of dark chocolate

Snack
- 1 cup of rotisserie chicken with 1/2 cup of avocado

Dinner
- 2 large turkey burgers (no bun) topped with some mayo
- 5 cups boiled kale with 1/4 cup olive oil
- small tomato salad
- 2 prunes and some melon

Snack
- 1/4 cup avocado
- 1/4 cup organic coconut milk
- 6 large strawberries

Ok, so just to clarify, is the food you posted pretty typical for you or did you really increase the food that day? Have you been feeling bloated every day? Just clear up some details and let's see how we can help. Your meals and snacks look so healthful to me, just wondering if the dried fruit at dinner and in the lara bar caused any problems; some people find kale a bit hard to digest; if the coconut milk had guar gum or carrageenan, some people react badly to that. Some people get ibs from chocolate, the darker has more cocoa content and so can be problematic, while the milk chocolate has dairy and can be problematic.

Thanks for the quick response! Clarification:

For the last 2.5 months I'd been eating NSD - meat and a lot of raw fruits/veggies/nuts. Really improved my AS stiffness but the last week or two I started to have a colitis flare, with increasingly more stomach bloating every day.

I read that NSD can aggravate UC and cause stomach bloat (http://chriskresser.com/paleo-diet-challenges-solutions-ii-its-all-about-the-gut) - either because of the excess protein if you have low stomach acid, or because of excess insoluble fibre if you're eating lots of raw fruits/veggies/nuts. So I decided to partially revert back to a western diet just to see what would happen (basically reduced all paleo foods and made up the calories instead with some sticky rice one day 1 and 2 pieces of wheat toast on day 2)

Within 2 days of eating that way, my stomach settled down and the bloating went away almost completely. But I had a major AS flare (due to the starch, I guess?). Rib pain and burning like I've never experienced before.

Finally, not knowing what to eat anymore, I spent yesterday eating mainly meat and healthy fats as I described above. Next morning, back to bloating, UC symptoms, and in fact I feel fat all over. I suspected maybe I overdid it on calories and fat, hence the title of my post.

Now I'm not too sure what to eat... frown

Btw all the tips about food sensitivities are really helpful:

>>dried fruit at dinner and in the lara bar
maybe but I have been eating dried fruit and larabar every day for 2 months so I thought it was "safe"

>>if the coconut milk had guar gum or carrageenan
Carrageenan does flare up my UC every time, but in this case it was just pure coconut milk, no other ingredients

>>some people get ibs from chocolate, the darker has more cocoa content >>and so can be problematic
maybe, I almost never eat chocolate, this was a first as I had read on another post that most people tolerated it well

>>some people find kale a bit hard to digest
Yes, this might be the culprit

I've got the answer for you. I used to look 10 months pregnant every night, after dinner especially, before I learned a very important golden rule. Food Combining 101.

NEVER eat fresh fruits with or after a big meal of fats and proteins. ALWAYS eat melon alone, never combine melon with any other foods. Eat your fruits first, in the morning, or at least 1/2 an hour before a big meal, but NEVER after.

It takes different levels of stomach acids to digest different foods. When you combine the wrong foods you aren't digesting it all properly.

Fruits digest very very quickly and cleanse out the digestive track, but when they are combined with fats & proteins they get caught up with foods that take hours longer to digest, so they start to ferment, get caught with a slow ride, and feed bad bacteria.

I promise, this revolutionized my life to learn this.

There are many other rules to food combining, but what I just listed are the most important, I wouldn't get too caught up with much else. Also, there are exceptions too. Like dried fruit can be combined with nuts etc. But for you, if you want a flat tummy right away, go simple, eat fruits first, melons alone, and see what happens! Might take a few days for the insides to calm down, but I promise this works.

Check out this chart for sure!! http://www.alderbrooke.com/images/food-combining-chart-front.jpg

Another chart: http://www.vitallifefoundation.com/uploads/2/2/5/0/2250125/food_combining_chart.jpg

And another chart: http://upload.wikimedia.org/wikipedia/commons/a/a1/Food_combining_chart.jpg

And here is a simple article that explains it too: http://www.healingdaily.com/detoxification-diet/food-combining.htm

You will notice they all say Eat Fruits Alone, and Eat Melons Alone. I learned this the hard way smile

~ Another exception is green smoothies and green juices as everything is so broken down and "pre-digested" that greens go with fruit when blended or juiced. So green juice is quickly absorbed and does not travel through the digest track fermenting, etc. Where a piece of melon eaten with a steak would Painfully bloat me up like a huge hot air balloon.

And always "EAT DESSERT FIRST"!! xo

I'm now a KICK AS (and Kick IBD) success story!! After going low starch Paleo to heal my gut, I can now eat nearly all starches, grains & foods without inflammation, flare-ups, or pain. I used a modified SCD diet approach (minus dairy! plus cacao ♥). Cheers to healing & thriving again! I blog at http://www.forestandfauna.com/about/

LOL, minutes before I saw your response, I had just eaten some chicken salad followed by a bowl of melon smile

Great advice! I remember having read your links in another post I found a while back, but somehow I didn't connect the dots. I will try this.

Do dates count as fruit? I had a larabar (basically dates, almonds and coconut) as a snack 3 hours after lunch and within seconds my stomach had expanded a great deal. Maybe it's just any form of sugar?

NSD relieved all of my IBS bloating etc. I agree totaly with everyone above and I don't stack the fruits on when I eat a predator style meal = belly ache. Hang in there you will figure it out. Then you will get to the I have it figured out stage then you will crash and have to dig in and get going. Thats when it's nice to have Kickas around so folks can give you a little tune up and maybe a pep talk.
ETTE.
Darrel.
By the way I just picked up a new mule I named him Willie, he is out of one of Wilfred Brimley's(western actor dude) mares. I will figure out how to change my pics and put ol willie on here.
