tim, what does you daily diet look like? Sorry for late reply.. way too busy with work. My diet has been NSD for 10+ years now... first 4-5 years always me cooking nearly as was single.. last several years my wife or her family as they enjoy cooking more than me  My wife and her family have picked it up pretty good... even introduced several new items I would never have thought of with limited cooking background. Breakfast: Do not really eat breakfast anymore.. I have a morning Mate Cocido now... (tea drink here in Argentina). It is great... helps with keeping you regular as well. Lunch - usually around 12noon (I work at home.. usually get up between 9am and go upstairs to office) - grilled chicken, beef, fish, pork for meat - many times a salad of several veggies (leafy greens, tomatoes, cabbage red or white, celery, carrots, olives, red peppers, beets..) and sometimes sprinkle grated cheese on top and always olive oil for dressing if no salad... grilled veggies or spinach balls that are awesome... sorry do not have recipe... wife makes, steamed brocolli with olive oil and sea salt... or even asparagus with cheese sause. Afternoons: - snack on a some walnuts... used to with raisons... but now cutting out sugar some more - between 5 to 6pm will snack on piece of fruit.. apple, strawberries, grapes, watermelon, pears, pineapple... - If no fruit.. eat organic yogurt with probiotics Dinner... typically around 9pm... see lunch menu... Breakfast - watermelon, pineapple, mangoes, strawberries I juice apples, cucumber, ginger and celery in a juicer I also like eggs too, but not sure if they are causing me inflammation? Snacks- Almond butter with fruit preserves on a plate, Like a peanut butter jelly minus the bread Almond butter cookies, I cup almond butter, 1 egg and sugar to sweeten as you like Applesauce Chamomille tea with honey nuts, grapes and apples Lunch & Dinner- Grilled chicken breast on George Foreman with romaine lettuce, mushrooms, carrots,green onions,celery Tuna in olive oil, I eat it out of the can or add mustard Kale grilled on a griddle with coconut oil,grilled asparagus with coconut oil Beef cut into thin strips grilled with onions, not sure if beef is causing me inflammation, I just have it once a week 
Diet change has improved my RA. I feel best eating raw veggies and some fruits and avoiding grains, sugars, nightshades, beans and dairy. (It sounds like you mention you are still having some inflammation - and I just wanted to let you know, it seems like for me it just took a while for my body to adjust to the NSD/LSD, like months, but then something clicked, and now I rarely get inflammation anymore without knowing the direct cause; like coffee, a restaurant meal, not enough sleep, etc)
I'm now a KICK AS (and Kick IBD) success story!! After going low starch Paleo to heal my gut, I can now eat nearly all starches, grains & foods without inflammation, flare-ups, or pain.
