Hi Drizzit I tried to make some almond pancake this morning and failed miserably, they were more like almond porridge! Have you got a recipe you use? I would love a copy if you don't mind!

Hello All... KIWI..Thanks for the baking powder substitution. I'm going to try some kind of apple pancakes today for Dan and work toward some kind of cupcake for our son's 1st birthday on Saturday. I want Dan to be able to eat what everyone else is eating. I was thinking of trying these.... substituting other stuff where needed...any ideas? http://healthyindulgences.blogspot.com/2009/06/healthy-coconut-cake-bites-grain-and.htmlShe also has a recipe for Chocolate Apple Bread that looks awesome but uses BUCKWHEAT flour. Anyone know if buckwheat is off limits? I may try it with just almond and coconut flour.

Hi Susan. That recipe looks fine and perfectly safe. Only thing...don't use Splenda as it's starchy (also not sure about erythritol). Best to stick to honey or good old sugar. We have a Diet Specific recipe forum here at KA you can have a look in. Kiwi.... your brownie recipe makes me want it RIGHT NOW! I may just make that for the birthday cake and frost it w/ my crazy rich buttercream.....Little Drew will never know what hit him! I have to be ready to get a picture of the expression on his face when he gets his first taste of chocolatey sugary goodness. Thanks. I'll let you know how things turn out.

Sounds good Susan  If you click on the "Forum List" button near the top of the screen and then scroll down...you'll see a forum called "Diet Specific Recipes". There are heaps of ideas in there. The other good thing about coconut flour is the fibre content...38%. Some people struggle adjusting to the NSD when it comes to fibre at the start so coconut flour is great.

Thanks Susan for the Healthy Indulgence link - I made the almond flour biscuits last night and they're pretty yummy. The first almond flour goody I've liked! So that was breakfast - Broiled biscuit with cherry preserves and a red delicious apple lunch - canned tuna (packed in olive oil, salt NO veg. broth) pumpkin seeds, another apple; making Tacos for dinner - mine sans tortilla, so basically herb seasoned ground beef, shredded cabbage and various other veggies to to toss with it.

Hey..
I tried almond flour pancakes last night and I too ended up with fried almondy flavored mush. Lucky for me, Dan eats anything! lol especially when it's covered with butter and maple syrup. Anyone have a hint to make actual pancakes?

Here you go Susan, give these a go. NSD Coconut Flour Pancakes Be sure and use plenty of butter or very good non-stick pan.
