Starch is a way for plants to store their energy - chained sugar that is produced by photosynthesis. Plants will store their energy primarily in their roots for later growth or they will store it in their seeds, for the same reason, or in fruit that needs to become sweet in the end. Starch in leaves like in spinach or turnip greens is unheard of. I would say check all other things you eat and above all give the diet it's time.
