What a great thread! When I started the diet I was super sensitive to starch and could only tolerate about 2 grams a day. So I'm sharing a day in my very strict BEGINNER'S ELIMINATION DIET

BREAKFAST:
- hard boiled eggs (I cooked 12 at a time)
- sliced kiwi or ripe pineapple
OR
- scrambled eggs with chives, peppers, and mushrooms

LUNCH:
- warmed up dinner leftovers
- blueberries, strawberries and raspberries (I bought frozen and then defrosted)

DINNER:
- roasted chicken quarter
- roasted rutabaga 'fries'
- sauteed spinach
- sauteed red peppers
OR
- bolognese sauce
- spiralized or julienned zucchini noodles

DESSERTS & SNACKS
- defrosted frozen fruit (often less starchy than fresh)
- coconut balls made from shredded coconut, coconut oil, ground almonds, and vanilla
- kale chips (made with olive oil)
- dairy milk milk chocolate (only chocolate that didn't aggravate me)
- coconut milk smoothies made with berries


Suspected USpA. HLA B27, xray, u/sound, blood tests all -ve. Ancient history of plantar fasciitis, SI joint pain, knee arthritis. Recent history of tendinitis, neck pain, debilitating finger pain and stiffness (especially mornings). No diagnosis, no meds.

2010 - stopped eating dairy
2012 - stopped eating wheat
2014 - stopped eating all grains
Jan 2017 - discovered NSD - 98% improvement in symptoms, continually amazed by my results, wish I'd found kickAS sooner
