I also do not do well on very low carb diets. Ketosis makes me feel very edgy.

But I have found NSD doesn't have to be super low carb. I eat about 100 grams of carb each day, mostly well cooked broccoli, spinach and zucchini and lots of low sucrose fruit like cherries and kiwi. (I've been trying to limit disaccharides too.)

I'm really sensitive to starch so even low starch foods like nuts, apples, carrots, cocoa, etc. cause me pain, so my diet is still pretty limited. But I'm nowhere near ketosis.

I can also say that my mood, especially my anxiety, has improved a great deal on this diet.
