Hi, Molly. The author of the book observed how the people in Vermont lived and raised their livestock. The ACV made a huge improvement in the health of the animals and people (he cited larger, more healthy calves, more milk, etc). I've had this recommended to me a few times, so we have this "cider" with breakfast 1-2x/week:
1 Tbsp (15ml) ACV
Honey to taste (5-15 ml?) in water( I use 30ml or less)
The honey also provides nutrients, especially minerals. I typed up a summary of my reading and you are welcome to it if you'd like it. I have a friend who says her 75lb weight loss was due in large part to drinking that "cider" daily.
Sunny, I never thought about vinegar causing flares. Have to keep an eye on that. SJLC, I need to remember to try it on my salad. MCM, we've had tummy issues over a week here. Get probiotics if you haven't already. We like aloe vera juice as well. Found a good brand without thickeners.
