I just made these tonight for supper and they turned out wonderful!!

Meatballs-
3 lbs ground beef
2 eggs

Mix together. Roll into small meatballs and place in two 13x9 pans. Bake in 400 degree oven until done through.

Cream sauce-
4 ribs celery, chopped
2 tablespoons onion, chopped
2 tablespoons butter
1/2 cup chicken broth
3/4 cup heavy cream
salt, if needed
xanthan gum

In a large skillet, saute celery and onion in butter until soft. Add broth and cream. Bring to a boil. Turn down heat. Add xanthan gum, a little at at time, heating through each time until desired thickness. Add meatballs.

You can add chopped mushrooms to make this cream of mushroom soup or chicken for cream of chicken.. I'm going to add dill next time and serve over salmon. It really is that good!
