Beat together: 4 eggs 75g melted butter 1 tsp vanilla essence 1/2 cup sugar
Then mix in: 3 cups dessicated coconut handful of raisins or sultanas.
Grease a slice tray or line with baking paper. Press mixture into tray.
Bake about 25 mins at 180 C. Cut into squares when cool.

Thanks Chelsea. Made it, (with organic raisins and dried cranberries), cooled it, smelled it, (lovely vanilla/coconut aroma...)sliced it, froze it - forgot to test it though! I figured it would be the sort of thing that I can bring with me when I work 9-2:30 without a break - I can munch on a mouthful or 2 in between clients!

Hi Chelsea I made your recipe - and ate 2 squares - just now! lol It's really easy and a great moist but firm texture. It reminded me of an English school dinner favourite Jam and coconut slice. So I took a square cut it horizontally through the middle and spread jam on it and sandwiched it back together - Yum! It's not too sweet so I'd cut it like that and spread butter and jam on (like an English scone) and have it for breakfast or a snack. Eating it like this would help with extra calories too. Need more eggs, but am going to try your brownie and cookie recipes. Thanks for posting this.

Hey Tink....that's exactly what Jon does! He eats this every single morning and spreads it with butter/marg and either honey or jam.
Originally the recipe had 1 cup sugar but he didn't need it that sugary so we cut it by half and it works better we think.

I'm metric illiterate - how much in tablespoons/cups is 75g butter - would agave or honey sub okay for the sugar or would it be too liquidy? thaNkS Mary Cay

I think honey or agave may be too liquidy.
Don't know how many cups of butter it is but 75g = about 2.5 ounces

75g equals one third cup melted butter.
180 C is equal to 350 F.
