Rutabaga (aka swede) isn't quite "no starch" but there's less than one gram per serving, making it a better choice than carrots. Just keep in mind that rutabaga is like other winter veg in that the starch level can vary, so test with iodine if you're worried.

This is a great replacement for starchy sides like potatoes and parsnips. Roasted rutabaga is wonderfully rich with a lovely mild turnip flavour (I hate actual turnips).

Makes 4-5 servings

Ingredients

1 large rutabaga (about 1.5 lbs)
1 TB olive oil
Salt and pepper

Instructions

1. Preheat oven to 375F.

2. With a large sharp knife cut rutabaga into quarters.

3. Cut each quarter in half again. Then use your knife to cut off the peel.

4. Slice the pieces into half inch slices, then again into 3 or 4 evenly sized "fries"

5. Toss with olive oil until evenly coated. Lay out on 2 large baking sheets. Season with salt and pepper.

6. Roast for 20 mins or until sides facing down are nicely browned. Roast 20 mins more. Fries should have a dark golden colour. You may need to roast a bit longer to achieve the right colour on both sides.

Rutabaga doesn't get crispy but the roasting will give it a lovely mellow, caramelized flavour. It's worth it to cook until nicely browned since this is what makes them taste so good.

A serving of 130 grams (just over a quarter pound) contains only .4 grams of starch.
