I have always HATED cauliflower. Until now. Meet my new BFF, Cauliflower Rice!

Note: It sounds like sometimes cauliflower can test starchy. I live a bit on the edge and rarely test fruits/veggies that I usually eat unless I get into a painful flare-up.



Here is a great video on how to make cauliflower rice in like 30 seconds:



2 cups cauliflower "rice"
3 TBS coconut oil
1.5 TBS coconut vinegar
chopped garlic
chopped shallots
chopped mushrooms (I used dried shiitake mushrooms soaked in water/tamari sauce)

chopped cilantro
chopped green onions
chopped avocado


Saute first group of ingredients together until well cooked. Then add in fresh cilantro, green onion, avocado.

Very versitile recipe. You can add in any of your favorite veggies, chopped bell peppers, carrots, zucchini, etc.

I made in the style of Chinese Fried Rice. It was so GOOD!!!


I'm now a KICK AS (and Kick IBD) success story!! After going low starch Paleo to heal my gut, I can now eat nearly all starches, grains & foods without inflammation, flare-ups, or pain. I am also experimenting with making the cauliflower rice "raw" and mainating it in lime juice, then adding in curry spices, veggies, herbs, etc.

So far it seems to taste way more like "comfort" food when heated, but I won't give up on finding the perfect raw recipe for it!
