Hubby Jon came up with this one...it's yummy even to me a non-NSDer. He likes to toast it lightly and spread with butter and have with poached eggs in the morning. Or he tops it with butter and slices of cheese. Or mashed avocado. Or tuna and onions...many options!
"FLAT BREAD"
Whisk together: 5 eggs 100g melted butter 1/2 teaspoon salt
Then add and whisk till no lumps: 1/2 cup coconut flour 1/4 cup ground flaxseed (AKA flaxmeal or ground linseed)
Then mix in: 1/2 cup sunflower seeds
Spread into a greased and lined slice tray. Bake at 360F(180C) for 15-20 mins. Allow to cool a bit before cutting into 8 rectangles.

Thanks so much, I love bread but it does not love me back. I can't wait to try this recipe 
Diet change has improved my RA. I feel best eating raw veggies and some fruits and avoiding grains, sugars, nightshades, beans and dairy. Hey all, we have been doing some tweaking with this flatbread and have a new variation:
Reduce flaxmeal to 2 TBSP Omit sunflower seeds Add 1 TBSP dried mixed herbs Add 1/4 of an onion - finely diced or 1 spring onion
Add a few TBSP of water to make it easier to spread before putting in the slice tray.
Jon has this every day and makes sandwiches with it.

Thank you, Chelsea! Do you think this could be made in the microwave? I remember making a microwave flatbread a while back. I'm living in a new home where the oven is not working now!

Hmmm, no I don't think it would work in a microwave. I haven't tried though.

i switched 100g butter for 3oz coconut oil. the bread is great and the house smells great. mike

yesterday i used almond flour by mistake i didnt catch the mistake until the cleanup.the bread was still good.
