Hi, I can't remember if I've posted this recipe before but I just made it again today and was reminded that it's pretty good.....esp spread with butter smile

It's from the book Cooking with Coconut Flour by Bruce Fife.

Cranberry Walnut Loaf

8 eggs
1/2 cup melted butter (100g) (or coconut oil)
1/2 cup milk (or coconut milk)
1/2 cup sugar
1 teaspoon vanilla
1 teaspoon lemon essence
1/2 teaspoon salt
2/3 cup coconut flour
1 teaspoon baking powder (make your own starch free 2/3 tsp cream of tartar, 1/3 tsp baking soda)
1 cup dried cranberries (or sultanas/raisins)
1/2 cup chopped walnuts

Whisk together eggs, butter, milk, sugar, vanilla, lemon & salt.
Sift in coconut flour and baking powder and whisk in well until there are no lumps.
Mix in cranberries and walnuts.

Pour into greased and lined 9x5x3 inch loaf pan and baked at 350F (175C) for 60 minutes. Remove from pan and cool on rack.

Chelsea-This sounds so good! I'm going to make some for breakfast in the morning. It also sounds like it may freeze well (maybe I'll make extra to eat later).

Hi Teri, Jon is currently having this for breakfast. He loves it. At the moment we are just making it with sultanas as he prefers that to cranberries. Also we weren't sure if he is OK with walnuts or not so we are leaving them out. It's just a good without them anyway.
