Coconut Flour Muffins
3 eggs 2 Tbsp melted butter 2 Tbsp milk (water if you're dairy free) 3 Tbsp runny honey 2 Tbsp sugar 1/4 tsp salt 1/4 tsp vanilla essence 1/4 cup coconut flour 1/4 tsp baking powder (make your own starch free using 2 parts cream of tartar to 1 part baking soda)
Blend all ingredients except flour and baking powder. Then add flour and baking powder.
Use standard size muffin tray and use baking cups. Half fill them with mixture. Sprinkle with chocolate chips or sultanas. The mixture is runny so these usually end up on the bottom of the muffins. If you don't use the honey then the mixture usually sticks to the baking cups.
Bake at 200 degrees celcius (390 F)for 15mins. Makes about 8 small muffins.
