Was feeling really good today as the red/darkness under my eyes had cleared right up.. It was remarkable. I put it down to the vitamins, raw garlic and brocoli I had the night before... They were almost completely gone for the whole day, until I went to sleep. I crashed at about 4:30pm, was completely knackered.. Woke up and the redness/darkness under my eyes returned! They're back now and are quite noticeable and prominant... This is extremely odd and suggests alot of things... (not to mention it sucks) I had brown pasta with cheese JUST BEFORE I went to sleep.. Maybe this is a problem for me? Maybe I have gluten problems because I had very little issues with my eyes when I was on the NSD.

Thoughts??

pasta + cheese = a double serving of dairy and wheat which hold the no.1 and no.2 spot in the rankings of the most common problem causing allergenic foods.

I suppose oats do not categorise under wheat or dairy (obviously), supposedly this reduces the chance of myself having an allergy to them? Also starchy vegetabes?

One suggestion from me - I've been a celiac for nearly 25 years - if you eat oats you need to find organic oats. For many many years oats were on the list of banned foods for celiacs. I didn't eat them until really recently. It turns out that oats are very often, if not always, contaminated with wheat, obviously in the refining process. However, organic oats appear to be prepared with much more care and less likely to be contaminated.

It's been a real treat for me to be able to add oats back into my diet.

Oats still contain starch (altough less than wheat), so if you are stil NSD then I wouldn't eat them.

I have been on a low starch diet for 2 years, due mainly to IBS symptoms when I eat the stuff! I have noticed my skin and scalp are a lot better without starch. I guess anything you have an intolerance to will effect ALL of your body, not just your stomach.

Interestingly I have type 1 diabetes (insulin dependant), and since dramatically reducing the amount of starch I eat, I have been able to lower the amount of insulin I need. Us diabetics were told for years that starchy carbohydrates were best, as they release their sugars slowly; this is not true! If I eat starchy food, my blood sugars shoot up within 15 minutes! Also, in ratio to sugary carbohydrates, you eat a lot more glucose in starchy food than you would with sugar and chocolate, because you can't taste the sweetness/sugars in starchy foods, so end up eating more.

Eve if you don't have diabetes, the Low Starch Diabetes Solution by Dr Rob Thompson is facsinating reading!

Oats do not contain gluten and are supposed to be one of the safest grains (along with rice) but like all starchy grains should still be eaten in moderation. As Wendy correctly points out some oats can still contain traces of wheat. Since you have not been diagnosed with celiac and are still in the early stages of dietary experimentation I wouldn't worry too much about that at this stage but in the future it could be something to look out for.

There is very little chance of having an allergy to any starchy vegetables. The nightshade family are really the only vegetables that could be potentially allergenic (tomatoes, peppers, eggplant, potatoes) but the chances are extremely low especially if they are well cooked. If you are having potatoes then make sure that they are well boiled but apart from that eat as many vege's as you want.

When you first start looking into allergenic foods it can be a bit overwhelming because so many foods can be potentially allergenic. That's why at the beginning it is easier to start off by first eliminating the most common allergens. In the USA dairy, wheat and soy account for 90% of all food allergies.

I quit eating all my allergy foods about 3 years ago (1 year before I started NSD) but I keep becoming sensitive to new foods. So I have to keep eliminating NSD safe foods from my diet - kind of sucks!

I think its because I have really leaky gut and my diet is so limited. I keep hoping time will heal, it seems to be taking forever.

To ensure I do not become sensitive to the few foods i eat, I make sure i do not eat the same foods two days on the run. For istance I can eat any meats but i eat a different meat every day, haddock, beef, pork, lamb, chicken, turkey, liver, cod, plaice, etc. And I alter my oils a bit. I think codliver oil and cocout oil are the best, but i also eat brazil nut oil, flaxseed oil, evening primrose oil, star oil, lard and so on
and i eat eggs only every other day. I find if I only eat natural foods, mainly organic, I do not get sensitive. It is only foods that have been messed aroud with by human beings that tend to give me problems
