Hi Everyone,
I've been on the NSD for about a year and a half. In the KickAS food list it shows raw carrots as having very low starch content...I made some fries with them which turned out great but I was wondering if baking them could convert some of the sugars to starch?

Here's the recipe:

Cut up the carrots into french fries. Soak them in salted water for about an hour. After that remove them from the water and dry them out with a towel. Put them back in the bowl and sprinkle with oil and a bit of pepper and bake in a pan @ 350-400 F turning once in a while. Bake them until they're nice and brown.

They really hit the spot but I had a flare up a couple days after eating them. It may have been something else so I might test them again in a few days.

I can fry chicken, fish... as long as not deep fried I am fine. Are these deep fried on the outside? If so, I would imagine it may be an issue.

No deep frying... you just put a couple tea spoons of oil onto the carrots and into the baking pan and let them bake in the oven.. They were pretty good. I'm getting my last flare up under control. I might make some more this weekend and see how I feel after eating them. Also i try to get them as crunchy as I can without burning them. If you try making them let me know how it goes.

Wondering why they are soaked in salted water... they don't have any nasties to draw out like, say, egg plant.
Some starch would leach, but not very soluble in cold water.
