Hubby Jon came up with this one...it's yummy even to me a non-NSDer. He likes to toast it lightly and spread with butter and have with poached eggs in the morning. Or he tops it with butter and slices of cheese. Or mashed avocado. Or tuna and onions...many options!
100g melted butter
1/2 teaspoon salt
Then add and whisk till no lumps:
1/2 cup coconut flour
1/4 cup ground flaxseed (AKA flaxmeal or ground linseed)
Then mix in:
1/2 cup sunflower seeds
Spread into a greased and lined slice tray.
Bake at 360F(180C) for 15-20 mins. Allow to cool a bit before cutting into 8 rectangles.
