I debated whether to list this as NSD or LSD. Although this contains cocoa powder and almond flour - two foods that I know can trip people up, myself included - the serving is small enough that the recipe clocks in at only .34 grams of starch. I have never reacted to this recipe.

This recipe is so easy to make. It's from Elana's Pantry, a great site for almond flour baking. I even own one of her cookbooks. I encourage you to visit her site and look around.

Paleo Mug Cake

Serves:1

Ingredients

2 tablespoons blanched almond flour (not almond meal)
1 tablespoon cacao powder
⅛ teaspoon baking soda
1 tablespoon maple syrup
1 large egg

Instructions
In a mug, combine almond flour, cacao powder, and baking soda
Mix in maple syrup and egg until thoroughly combined
Bake at 350°F for 20-25 min

Hi Kellybells,

Well, I was wondering whether to put this recipe on (with its cocoa powder and almonds) but these energy balls are such good low-starch snacks that I'll add them here with your Paleo Mug Cake and let everyone make up their own minds if they can tolerate them.

Afterall, you can always make them smaller, right?


Almond Energy Balls

Put 200g of blanched almonds in a food processor and blitz for about a minute. Add 400g of pitted dates, 4 tablespoons of cocoa powder, and 2 tablespoons each of almond butter, coconut oil and chia seeds, plus a further two tablespoons of cold water. Blitz again until the whole lot comes together in a ball (add a little more water, if necessary). Then roll the mixture into about 20 balls and place them into the freezer. They can be stored in the fridge for a week or so, but in the freezer for several weeks. Enjoy!

Note: You’ll need a good, strong food processor for this recipe.
