Im wondering about the starch content of the apples in the apple fast. I have yet to find an apple that did not test starchy. Also would the apple fast be a bad idea for those with a history of candida issues?

Apples in Cayce's time would have been naturally ripened on the tree and would not have been anything like as sweet as today's coldstore-ripened sugar filled varieties.
The reason for selecting apples, I would guess, is low sugar content (then, not now) and high levels of pectin. The pectin is thought to extract toxins from the body as it passes through, probably by acting as gelatinous fibre to stick and push toxins in the gut through and out.
Alternative sources of pectin are pears, apples, guavas, quince, plums, gooseberries, oranges, and other citrus fruits. Again you would want a low sugar, naturally ripened alternative.
Your best chance of finding starch free apples would be from farm shops in picking season I guess.

I only do the apple regimen in-season so I can find non-starchy apples. I don't know about the candidiasis; one reason for doing the apples is for gut-healing and apples have quercetin, which can help achieve this goal in addition to the many other factors. It is always good to eliminate the C. albicans to whatever extent is possible, as it can exacerbate AS and interfere with proper gut healing. From those who have had severe candidiasis, many have suggested that the natural control methods take too long and it is better for some to just begin the anti-fungal drugs. I do not have first-hand experience with this, but have done only minor cleansing for this (garlic, colloidal silver, caprylic acid, etc) as I have perhaps done enough fasting that I don't indicate very high levels of this doing the "spittle test."
