I just made a batch of this raw no bean, "bean dip" and I couldn't stop myself from dipping fresh bell peppers into in over and over and over. It seriously hit the spot.
“Refried Beans”2 cups soaked sunflower seeds (~1 ¼ cups before soaking)
2-3 Tbsp. raw tahini
1/3-1/2 cup pure water,
2 “ piece of white or yellow onion, chopped
2 tsp. chili powder
2 tsp. cumin powder
1 tsp. Celtic Sea Salt
In a food processor, puree all the ingredients until smooth. Note: Add more spices and some olive oil if needed. Add cayenne for spicy beans.
I didn't even soak the sunflower seeds first, and it still turned out awesome. I also added juice from one lime. I also added a little fresh cilantro & 1/2 a jalpeno. This is the perfect side dish to on of my favorite standards these days, Raw Fajitas, (recipe on link below). Here are a whole slew of Mexican Style Low Starch Raw/Vegan Recipes:
http://www.sweetlyraw.com/2008/01/raw-mexican-class.html I was scared to try sunflower seeds my first couple months on the diet, but I found I do really well with them. They also show up as not having starch on here: http://nutritiondata.self.com/facts/nut-and-seed-products/3076/2 - I suppose someone could also do this recipe with blanched almonds or walnuts though too. xoxo,
Andrea
