last week, we wanted a whole organic chicken, but the store was out

so we bought the organic thighs instead.
the ones with the bones and skin still on.

since i had really been in the mood for roasted chicken, i prepared the thighs the same way i prepare the whole bird, and the taste was basically the same.

recipe:

rub a little EVOO on the chicken

place dried or fresh rosemary and thyme under the skin and above the skin

sprinkle some sea salt over the skin

bake at 350 F for 30-40 minutes or until done

take the skin off and eat

so close to the whole chicken, but even quicker

though even a whole small chicken only takes a little over an hour.
we just stuff the inside with some onion, celery, fresh herbs,
prepare the outside as above.
and cook.

so long as one doesn't overcook chicken, its so moist and juicy
and flavorful.
