Raw "Living" Hummus

Makes 3 cups
•2 1/2 cups almonds, soaked for 12 hours
•1/4 cup, plus 1 tablespoon raw tahini*
•3/4 teaspoon freshly ground black pepper
•11/2 teaspoons chopped garlic
•1 3/4 teaspoons cumin
•1/4 cup plus 2 tablespoons olive oil
•1/4 cup plus 3 tablespoons lemon juice
•3/4 teaspoon salt
•3/4 cup water (add slowly)

*You can also grind sesame seeds into a fine powder in your coffee grinder instead of purchasing actual store bought tahini

Add the soaked almonds to your food processor and grind down to a coarse meal. Add in the remaining ingredients, making sure to add the water as needed to reach the desired creamy consistency.

To serve, drizzle with olive oil, or dust with paprika.

Serve with fresh sliced veggies or raw falafel. Also makes a great addition to a Greek style salad.

Oh yeah! Miss my hummus...... I'm always on the lookout to find good dips that are dairy-free to take with a vege stick platter to social occasions. Thanks,

I might skip the cumin.. is cumin starchy / does it react to iodine?

Yes, if you are highly senstive to a little bit of starch, it will still taste great without the cumin. There is actually this cool site where you can order starch free concentrated infused oils flavored with spices, not sure if they have cumin, but I got a bunch of other spices from them: http://www.supremespice.com/Products%20Catalog.html

When I first started this diet 8 months ago, and I was in a LOT of Pain, I test EVERYTHING with iodine, and I gave up all spices, garlic, ginger, etc. But now that I am eating this super healthy plant based diet (with some meat) and literally just downing green smoothies, kale, mangos, etc, (taking curcumin) I no longer have any AS pain. I am like 99% pain free. So I totally added back all the spices, garlic, ginger, etc, and still no pain!

Let me know what you think of the dip! It goes so great with cucumber slices & celery sticks.
