This is Jon's new favourite for breakfast. We slice it and toast it just like normal bread and he has it with honey, jam or marmite. We made it not too sweet so it tastes more bread like. You can up the sugar to 1/2 cup if you like it sweeter and maybe add a cup of sultanas/raisins too.
I crushed and iodine tested the sunflower and sesame seeds and they are both safe.
Sunflower and Sesame Loaf
7 eggs
1/4 cup sugar
1/2 cup melted butter (100g)
1/2 teaspoon vanilla
3/4 cup coconut flour
1/3 teaspoon baking soda
2/3 teaspoon cream of tartar
1/3 cup sunflower seeds
1 tablespoon sesame seeds.
Preheat oven to 180C (350F).
Grease a 5x9x3 inch loaf tin and line with baking paper.
Whisk together the eggs, sugar, butter and vanilla.
Sift in the coconut flour, baking soda and cream of tartar and mix until there are no lumps.
Stir in the sunflower seeds.
Pour into the prepared loaf tin and sprinkle the top with the sesame seeds.
Bake for about 45-50 mins. It rises to about 2.5 inches.
