Here is my new favorite goodie (not even technically baked, as I dehydrate them for 6 to 10 hours) I plan to carry these at our local farmers market this summer, and so far I've had rave reveiws from people who can eat wheat, etc.

Big Raw Cinnamon Roll:
My own recipe:
1 cup ground flax seed
3-4 green apples (pureed)
2 cups dried coconut
3/4 cup dates
1 cup raisins
spice it with either vanilla or cinnamon (cinnamon has starch though)
dash sea salt

Mix together all ingredients, can use the food processor to help mix dates into coconut, then mix everything together in a big bowl. Form 9 rolls with your hands, building up sides on each one, so that no part of the roll is thicker than 1.25" inches.

Icing:
1/3 cup dates
1/4 cup coconut butter
1/2 cup coconut oil
Lemon juice
dash sea salt

Optional - Topping:
1 cup walnuts, chopped
2 tbsp honey
dash of cinnamon or vanilla

Dehydrate rolls overnight at 115*F, ice with frosting in the morning - top with honey/cinnamon walnuts. Here is a picture: http://pinterest.com/pin/249809110550865147/

I specialize in "raw" foods, so if you were to bake these, I would have no idea how long and at what temp. If I had to guess, I'd think 350 for 20 - 30 minutes, but I can't honestly say how that would turn out. They are amazing when dehydrated overnight though - and by dehydrating them you don't damage any of the flax oil or other natural enzymes, so they are super easy to digest and very good for you!

These look yummy thankyou for sharing the recipe I shall definately give them a go. I am trying to go more towards raw foods too at least for the warmer months.

I have just made something along the same lines and have used my oven as it does have a temperature setting of 40 degC the closest I can do to a dehydrator. I just need to improvise some perforated shelves as the bottoms take much longer to dry!

I would love to hear how they work out for you! My husband LOVES them, and he can eat ANYTHING he wants. Also, all the girls at the local healthfood store raved about them (them are my current recipe testers).

I had not used flax seed very much in the past, but I now love it. In these rolls it helps to give them a hearty "wheat" feel to them. Also, flax seeds are packed full of nutrients.

I have noticed that if I eat one of these in the morning along with some fresh made fruit/green juice, I am satisfied for a good chunck of the day.

Well they came out ok, maybe not as 'dry' as if they were in a dehydrator but they tasted good. Hubby liked them too.

I have been considering buying a dehydrator for a while but am seeing how we like the food before I do. I just looked at the price for an excalibur here in the UK and its gone up by £100 since I last looked not that long ago frown.

The icing was a bit hit and miss as I didn't have any coconut butter so used more oil and dates they didnt really mix that well.
The taste was still good with the bonus of not needing to snack afterwards. When I make baked stuff with coconut flour etc they dont satisfy me in the same way.

I shall definately be making them again smile

So glad to hear they were tasty wink

Finally got my hubby to get me an excalibur dehydrator for Xmas last year - it was totally worth the wait. Also finally got a Vitamix last year - it has become the most important thing in my life after my husband & our dogs!

I find you can mix honey with lemon juice and coconut oil for a quick and easy icing too, mixed in a food processor. I am personally just migrating to dates for sweetening things now. Dates & fruits don't aggrevate candida for me like honey does.

I made another batch today, and my friend who was over loved them too! She suggested though I rename them to be something more like an "apple fritter" and suggested making them with pears too. Then I thought, "oh, pear and cardamon & clove" would be amazing too! I will try that very soon!

I should add its best to make the icing in a food processor to get a really good blend. The dates make it almost like a caramel icing.

Andrea,

These have become a staple for us in the morning. Would you keep these in the fridge or are they ok in the cupboard. Our house is usually 15/16 deg c though about 20 at the mo due to the good weather we have had yeah!

I need a bigger fridge now so space is a premium!
