I've been following a NSD diet for 3 years with good results. I've developed an almond allergy so almond flour has been off my list. I still get a craving for "baked goods" and have been looking for an alternative.

Following some other interests, distiller grains, i.e., the "spent" grains for the brewing process, have come to my attention. Briefly, these are grains with all the nutrients of un-fermented grain, but without the starch. The fuel ethanol world is beginning to understand the value of feeding distiller grains to livestock. Obviously, this begs the question of whether distiller grains would be good for me and others on the NSD. Anyone tried distiller grains? Another point which interests me is that wheat gluten should still be available. Perhaps I can start baking again?

Glad You have had good results with NSD.

I have never heard of these kinds of grains, but still wonder whether all the starch is used up. If that is so, great. I was thinking of combining coconut flour with mushroom flour and if this were added perhaps the mix would be much better.

For most people the gluten is a bit of a scare, but really most of us probably do not have this sensitivity.

Good Luck with it--please report on Your findings and publish any recipe recommendations, if possible.

Interesting idea.

I personally would be weary to try distiller grains, because I just have so much bad history with grains. Good points though, they may be okay for some?

Have you tried using ground flax seeds or coconut flour?

Here is my latest favorite "baked goodie" that is super filling and nut free (if you exclude the chopped nut garnish).

I am also working on the most amazing cookie (very much like an oatmeal cookie minus the oats) main ingredients are ground flax seeds, ground walnuts, raisins, dates, shredded coconut.

I recently discovered how awesome ground flax seeds can be for "baking". I don't eat eggs, but flax seeds are a great subsitute for holding things together and givnig them bulk. FYI, brewers/distillers use the iodine test to make sure they have converted all the starch to sugar, so it should be NSD-safe.

I know gluten is often a bad word on these boards, but, as you mention, it probably has had a bad rap. I have tried coconut flour but I'm really unimpressed by it. I was thinking I might find a mix of distiller grains/coconut flour more palatable.

I will certainly keep everyone informed of my results. Sounds promising on paper.

Thanks Andrea. I haven't been thrilled with coconut flour but I haven't tried flax seeds. I'll give that a whirl. Thanks for the recipes. I avoid all nuts since I do react to almonds and peanuts, but I certainly will try without the nuts.
