This is the result of an experiment I tried using leftover pulp from my juicer. I have always loved quiche so I decided to try using the pulp as part of the base. Apologies for the some of the vague quantities.

Base

Pulp from juicing veggies approx 2 cups
Almond flour to bulk out the pulp to fill the base (I added it a bit at a time so can't give a quantity)
Dried basil
Some finely chopped walnuts
1/3 to 1/2 cup coconut oil of other fat of choice.

Mix all the ingredients together and press into a greased 8" loose bottomed baking tin.
Blind bake for approx 15mins at 180c

Filling

1 leek finely chopped
1/2 large onion chopped
2 cloves of garlic
3 eggs beaten

Fry the leek, onion and garlic and mix with the egg
Pour over the base and cook for approx 1/2 hour at 180c

You can vary the filling adding veggies or bacon etc and cheese if you tolerate it
