Can anyone tell me whether carrots and beets are acceptable on the NSD? I have read conflicting info about the starchiness of these veggies. thank you!

Depends on how strict you are about No starch. I'm skeptical that any of us achieve an ideal zero-point-zero amount of starch in our diet. It is really hard to avoid trace amounts creeping in. If one is highly sensitive to starch and aiming towards the ideal goal, then carrots and beets are definitely out, since they have been documented to contain starch. On the other hand, there are people who can not tolerate many forms of starch, but can still handle raw carrots. Perhaps beets are in the same category (can they be eaten raw?)

maybe its due to the sugars converting to starch as the veggie matures / after it is picked. that happens with a lot of veggies.

I can get away with carrots and beetroot in their raw form - grated in salads..... but would not eat them cooked as the cell walls have been breached and the starch is therefor e available to the gut...

I respond unfavorably to most root vegetables. frown

Carrots and beets are off-limits to me, which is unfortunate, because I absolutely love beets.

The only starchy root veggies that I can eat are garlic and ginger.

i do well on carrots and celery root. raw.
beetroot - only when not in a minor flare.
