Hi Guys,

I'm pretty proud of myself on this one. It tastes unbelievably the same as mashed potatoes! I don't measure stuff while cooking, but this is what I used:

Coconut flour
Butter
Lots of coconut milk to thin it out
Salt
Pepper

Ok and I know some of y'all don't believe in microwaves, but I microwaved for about a minute and then mixed all the milk around until the right "mashed" consistently, and OMG, it's mashed potatoes, for real!

Nom, Nom! I even added a little Texas Pete hot sauce just like in the olden days of starch eatin' and ahhhh I could not believe it! I'm getting ready for meat and "potatoes" again, shepherds pie, etc!

Going to bed now with a full and satisfied tummy.

Sounds promising! I will give this a try. I do miss potatoes.


AS symptoms started 1991. Official dx in 2006 with HLA-B27+, fused SIJ, bone spurs in back, extreme rib/hip pain, and other family with SpA. Started Enbrel in 2006 with good results, but stopped in 2010 due to nerve damage (MS) from it. Getting good results with no-starch diet since 2011.

Here in the States, I've been getting mine from amazon.com: Azukar Coconut Flour (Pack of six 16-Ounce Bags= 6 lb) for ~$20 using their Subscribe & Save, which includes s&h. However, they occasionally run low on it.

Isn't it gritty?

Also, just be careful eating that much coconut flour all in one go as it is extremely high in fibre (38%) which could play havoc with one's gut...too much of a good thing maybe? crazy2

Thanks for sharing Lauren! I'll try it soon as I have bought a bag of coconut flour and wasn't sure what to try making first.

Chelsea,

It is not gritty as much as it is just dry. So I put a lot of coconut milk in it to soften it up. You also need to put a decent amount of salt in to counterbalance the coconut's natural sweetness.

Thanks for the heads up on the fiber. Hopefully it won't give me too much trouble!

I just finished eating a batch of it, and it is so surprisingly close to mashed potatoes! After I made mine, I put some cheese and bacon bits on it so that it was a bit like having a baked potato. I see a lot of room for experimenting with this.

Thanks for this lauren!

With Thanksgiving and all I really miss the potato and stuffing factor. I did these potatoes and added fresh chopped rosemary right at the end just so it would heat thru and release it's flavor. Then I put butter on them so it melted into a little pool of loveliness. Hit the spot over and over smile Thanks for sharing.
