The majoity of Lactobacillus species form large quantities of lactic acid from glucose as the sole major metabolic end product.

Starch is broken down to sugars so that a no starch diet, especially if combined with a reduction of sugar intake may starve any potential commensal lactobacilli of a substate (food source).

thanks david,

though i often try to be as low starch and low sugar as possible, i'm not always as good about it as i should be.

i find the whole topic interesting.

this week, in our infectious disease course, i picked out a few papers pertaining to the gut microflora and how it relates to disease.

i'd link the papers but they're from journals that need a subscription.
