9 oz whole unbalnched almonds
1 cup sugar
2 Tblsp flour (bet you could sub almond flour here)
4 large egg whites
1 tsp almond extract
1/2 tsp vanilla extract
in 300 degree F oven, toast almonds on cookie tray, stirring frequently, 5-8 minutes. cool toasted almonds. grind almonds til very fine in food processor.
mix ground toasted almonds, sugar, flour. add egg whites, almond and vanilla extracts. mix well.
drop by teaspoonfuls onto parchment paper on cookie trays, spaced ~ 1 inch apart. bake on middle oven rack at 300 degrees F 25-30 minutes til golden brown. transfer parchment paper to wire rack. cool completely, then remove cookies from paper with spatula. store in airtight container to maintain crispness.
